The NH Division of Parks and Recreation has a special Bureau that manages and promotes trails in NH. The following link will bring you directly to the mountain bike trails section of their site:

While you are one their site, take the time to look around  - they have info on rail-trails, snowmobile trails, and other recreational trails.
